Fat content substitution
Match the fat mass of one ingredient using another ingredient’s labelled fat percentage.
A clear answer. Here’s how.
Original fat mass = ingredient mass × original fat fraction. Replacement mass = that fat mass ÷ replacement fat fraction. Also shows the difference in non-fat mass. Non-fat portions may contain water, solids and other ingredients; the tool does not prescribe a water correction or promise equivalent texture, flavour or baking performance.

Worked example
A fixed demonstration, separate from the values you enter above.
- Original ingredient weight (g)
- 200
- Original fat content (%)
- 80
- Replacement fat content (%)
- 100
Example result
- Fat mass to match
- 160 g
- Replacement ingredient weight
- 160 g
- Original non-fat mass
- 40 g
- Replacement non-fat mass
- 0 g
- Change in non-fat mass
- -40 g
Non-fat mass is not necessarily water. Matching fat does not guarantee equivalent recipe behaviour.
